Sadly, quite oxidised on first pour. 2nd pour initially fresher but also faded quite quickly. Some nice crushed strawberries still evident. Would like to try a fresher bittle.

Two Burgundy lovers and their weekend in Napa Valley (SF/NAPA): Oldest Bachelet I've had and really shows how much the flavor profile from Bachelet has changed. As one of the prior notes stated, very austere and fading fruit and the dominating flavor on the palate was this savory meaty fruit that just tasted tired. Not that typical dark brutish fruit I was expecting from this wine.

Taking on some ‘sous bois’ development notes on the nose. There’s also a wisp of smoke and a suggestion of blood from a game bird. In the mouth it is lean, sinewy and taut, there’s no real fat but it is by no means thin and anaemic. All elements are so sharp and clear and you feel each rocky bump as well as taste all of the cranberry, pomegranate and fresh cherry fruits with great clarity. There’s a big whip of acidity flaying across the tongue on the finish and there’s a lot of earthy, savoury goodness left in the mouth once the wine is swallowed. A brilliant match with pot roasted pheasant, chestnuts, speck and root vegetables.

La Paulée de San Francisco - Gala Dinner (The Fairmont - San Francisco CA): Late night, small glass, brief note. Still slightly brawny, but so much concentration, great black fruit and roasted meat that everything comes through in wonderful balance now.
