Tuesday, February 28, 2012 - Another cerebral experience with a Joly wine. Definitely one for the wine geeks. Upon opening, with the wine cold, it had apple cider and floral elements and an oxidative style, very dry and perfectly fine, but not compelling. I vacuum-sealed the bottle and put in the refrigerator forgetting it for perhaps a week and then out of curiosity tried it again. Cold, there was little to recommend it, but with warming a fantastic array of scents emerge - honey, orange peel, meadow grass, nail polish, baking gingerbread and then sauternes-like smells coming and going. It is really all about the nose, but what an interesting experience. The wine also takes on quite a bit of weight with warming and is a bit hot on the finish at this stage. Still very interesting the next day on. As an aside, my wife did not like this nor did a guest. Another guest was enthrallled. Definitely a crowd splitter and is at its best cool or warm with air.
