Monday, December 16, 2013 - For my 1000 CT note I needed to open something special and Cayuse is always a good choice! A tremendous wine in a great spot. Blackberries, cherries, burnt caramel, black tea, seaweed and soy, light notes of red cabbage, hay and a touch of Cayuse mineral funk. Very integrated from start to finish, tannins are resolved and did not change much over the 3hrs decant. Pair absolutely perfectly with lamb shanks over polenta topped with basil and goat cheese.
