Monday, January 6, 2014 - Slow ox'd for 10 hours, and also saved 1/3 bottle for day 2. Pretty rough and tannic on first opening, and a tough drink. Fairly fruit forward, more cherries and roses than tar. After 10 hours the wife still finds this too tannic, although it has softened a bit. After 34 hours this has achieved a nice balance, with still evident but softer tannins, less fruit, and pretty tasty overall. There is a small amount of sediment at the bottom.
