Tuesday, March 31, 2015 - Used the Coravin for the first half of the bottle. Two days later opened up for the rest of the bottle. Beautiful tonight. Very rich and supple. Tonight very well balanced. Much more so than two days ago. Light yet very robust and intense. Blackberry syrup wrapped in dust. Dates. Leather. Hints of cinnamon and cardamon and a bit of rosemary. Wet crushed roses with a wee bit of citrus...perhaps orange. Crushed limestone.
Should be good for years to come. And after sitting half full (empty?) for two days it is drinking wonderfully tonight.
