Saturday, January 30, 2016 - Zachys Power of Packaging - Jan 2016 (Smith & Wollensky (48th & 3rd Ave)): Hello my lovely. Quite possibly my WOTD which is saying something given the very tough competition. This went into the glass for a few hours before we really spent any time with it. Wanted to give it the opportunity to open up since I think some of these are better with the 20 years of age. Even at 12, this is a baby. Very impressive, major spice cabinet, blackberry. Ever evolving even in it's 4th hour in the glass. Wonderful.

12/7/2016 12:08:00 PM - Hard to totally say as I don't know how long the bottle had been open before we got our pour. But I will say that the first sip (from first pour) was very different than the later sips when it had had a bit of time to develop. Given the unknowns, might do a 2 hour decant and then just expect it will open up over the course of dinner. Or you can start earlier and try until you hit the right spot and rebottle.
