Friday, February 23, 2018 - Deep ruby. Initial blast of oak, but then game and red fruit. Dense to start, loosened as it opened, some cooler green tones, excellent acidity. One of the better Perrot-Minots I've had, but still not aligned to my taste.

I came back to the dregs 2 nights later and was amazed at how the cherry fruit had sweetened and it had developed a spicy nuance that was nowhere to be found right after opening it. The wood had not disappeared, but it was much more tolerable and better incorporated.
