Monday, March 25, 2019 - A little more oxidative than a previous bottle. Slight aldehydic character for the first 30 minutes reminiscent of many, low SO2 wines, but mostly without apple cider flavors predominating. Seemingly freshened up with air. Rad texture with almost a brioche character I would associate with Champagne raised on lees. Probably a polarizing Chablis for many, and not really my preferred style or even true, 1er Cru quality. The cool kids assuredly adore.

    3/25/2019 10:31:00 PM - Opened one of these last night, and my notes agree with you completely though we said it in different ways. I called the fruit 'Californian'. Definitely falls short of expectations for Chablis.

    3/25/2019 10:39:00 PM - I saw your note, which prompted me to open another bottle. I like the texture of the wine, but agree it’s not classic in character. A winemaker in Chablis, whom I know very well and of whom you are most likely familiar, and who is also personal friends with Pico, told me that ‘14 was around the time Pico began using more SO2 than prior. Some previous Pico vintages were arguably less stable than ‘14. Again, I am not a hater, and the ‘14s I have tasted are not shot. But, yes, they are arguably and seemingly less traditional, or classic, in style, which, at least to some, makes the wines more interesting. Cheers!

    3/26/2019 2:49:00 AM - Definitely not shot. I'm just someone who prefers that flinty/steely thing about Chablis, and am content to wait 5-10 years to drink Cru+ bottles. These are aging fast.
