Wednesday, December 11, 2019 - Game, smoked meat, forest floor, black cherries, and plumb on the nose. The palate is full of under-ripe cherry, a bit of cocoa powder, a slight chalkiness, and a dash of leather. Took about an hour to open up in-glass.
