Thursday, December 31, 2020 - A delicate wine and so tasty. Well-integrated acidity and fine mousse leads a palate of meyer lemon and red berries, yeasty complexity, and a lingering finish. Pretty consistent with my notes from exactly 2 years ago, but a bit more muted in acidity. Make sure not to pair with too strongly flavored foods. Even spicy charcuterie will overwhelm its flavors. But this is a rock star with raw / cured seafood.
