Saturday, February 27, 2021 - My first taste of Dauvissat's 2018... and my first AC from him. Opened a few hours before tasting.
Pours a pale gold. Good ripeness to the fruit; yellow apple and lime, and the classic salt. Solid minerality, but a tad less acidic than what I remember from the rest of the lineup. It also feels like this lacks some of the structure I've come to expect... it's seems like this might be on the flabbier side of Chablis. Finishes quickly.
Delicious bottle but hoping it packs on some depth in the coming years.
