Tuesday, March 2, 2021 - Tasted upon opening at 3.30 pm and then left it in the open bottle until dinner.

First taste: rich aroma of cherries supported by a little plums and some dried herbs. Maybe oregano? The palate has dense tannins and high acidity, leaving a savoury sensation not unlike sundried tomatoes. Not very enjoyable to drink, but with nice aromas.

3 hours later: the nose has turned down the fruit a little and turned up the notes of dried herbs, sundried soil, leather. The palate has softened considerably and now seems less dense and more in balance. The sundried tomatoes are now fresher and supported by more fruit, less tannins and some nice mushrooms. Great development.

With a couple of hours of air, this was very enjoyable. A good classic chianti. Will probably be even better in time, but I plan to start opening these bottles when we can all meet again and I can invite friends over for a nice porchetta.
