Sunday, May 2, 2021 - Opened this gem for my wife's birthday this weekend, and it lived up to expectation.

We paired it with anchovy butter salmon with roasted carrots and parsnips, and artichokes, which turned out to be a great pairing.

Lemon, stone fruit, hints of grapefruit and maybe some lavender hidden away on the nose, and this tracked well to the palate, all tied in with a nice creaminess that was balanced with the high acid present. Kind of reminded me of a Puligny-Montrachet. Very nice.
