Friday, July 16, 2021 - Another very good bottle. However not as great as the first 2 that I had that really wowed me. This is an interesting wine that really shines at the perfect temp with perfect amount of air. I recommend around 1 hour open, and drinking around 60 deg F. This bottle had very good precision, but balanced by a little creaminess. Perfect amount of sweetness/dosage for my palate. I believe its 7 or 8g/l. 93-94 tonight. Crab cakes weren't quite as good of a pairing as I thought they would be. I have 6 more bottles and am interested to see where this goes. Almost seems like it might be in a slightly closed down phase, if that even happens with champagne.
