Tuesday, July 20, 2021 - Notes are 45 minutes after coravin’ing a healthy glass.Poured into syrah stems. There’s a little meat and earth on the nose. Fruit is in the background, and wine crosses the palate with dry, dusty tannins. This could easily pass as a Cabernet.

Curious to see how the balance of this opens up later tonight or on another day, but it should pair well with tonight’s cherry and maple glazed pork chops
