Friday, July 23, 2021 - Berserker Offline (Mathilde Bistro - SF): Super gnarly brett upon first opening – was afraid this was going to be undrinkable by the time we got to dinner. Everyone seemed to think it was fine, and when I finally got around to it at the end of the night, the brett had magically subsided. Lovely texture, classic feral gamey notes, vibrant red cherry fruit with undertones of black plum. Excellent balance.

    9/4/2021 3:10:00 AM - Was probably reduced rather than brett. The latter doesn’t subside. If anything it gets harder to ignore. Though i do like some brett in wine.

It wasn’t a sulfurous stink like I get from young white burg - matchstick or sometimes overcooked/rotten eggs - that’s what I think of when I think reduction. it was that clove-spice VA-tinged, horse stable aroma. One experienced taster at the beginning of the night said it was too bretty to fully enjoy, but when he revisited later, he said it had calmed down. perhaps the other aromatics that air unlocked were sufficient to push brett to the background? Or something else. I dunno.
