Friday, July 30, 2021 - Soft and open-knit, with the richness of the fruit jibing well with the fine acidity. A bit straightforward but went down easy, and showed best alongside the caviar and fish puree amuse bouche and a clever crabmeat starter made with droplets of jellied seaweed and fennel.
