Thursday, December 16, 2021 - Pale gold color, nose has minerality, slight yeast, touch of lime. Palate is absolutely amazing. Smooth creamy mouthfeel. Classic Champagne hints of brioche, some green apple, good minerality and an absurdly long finish. Medium high acidity. Still tastes young, but is already ready to rock. If I had no job, a million dollars, and a liver made of titanium, I would drink this every day.
