Monday, December 27, 2021 - This developed into ever greater refinement and elevation over the course of 1 hour+. Just terrific.

At first, raspberry and unripe plum, underlying black tea with just a touch of forest floor and just tremendous silk and weight to the body. White pepper emerges but never goes full celery like Oregon pinot sometimes does.

Develops further into dark cocoa, long and rich marmalade with a burnt orange finish. Still with a smoky / tea backbone. Delicious.
