Sunday, February 10, 2019 - Good Chambolle even if perhaps a little bit past it’s prime.. Very tight and very Tanic On initial taste. Much more open and subtle two days later. A bouquet of cherry and a little bit of jammy strawberry and deep forest. Subtle tannins and réglisse in a wine with several layers in mouth, gentle structure and long finish.

2/10/2019 7:29:00 PM - It’s hard for me to imagine that a wine is “past its prime” if it’s still drinkable two days later. What am I missing(?)

2/11/2019 3:47:00 AM - Two days later was giving it time to breathe. I suspect it may have been better a year or two ago.
