Thursday, June 7, 2007 - great beading of bubbles. in in the mouth the bubbles feel foamy, leading to a fuller mouth feel. big nose, light fruit, more toasty, strong caramel. taste of green apple and slightly nutty, like those apples on a stick rolled in caramel and peanuts. muddled beer-like yeast flavors in the foam, no richness to it. good acid with slight bitterness at finish. as it opens up the caramel is strong, fruit comes out a bit more, the bitterness becomes chalkiness, and the champagne presents itself a a solid medium weight mellow drink. most people would enjoy this, unless the prefer very light sparklers, sweeter fruit, or something built to age.
