Sunday, December 27, 2015 - Four+ years after my first bottle, it has settled down. The highlight is certainly the nose, with sweet and subtle perfumes of oak and a touch of dried herbs. The palate is light+, medium acidity with a big-time milk chocolate covered berries thing going on. The finish is not particularly long but has a solid amount of tannin all things considered.
This was actually best by itself as an aperitif. It did not hold up to a sous vide flank steak. I have a bottle left and will consume it with a more subtle dish next time.
