Saturday, August 28, 2021 - (8/28/21) This bottle was decanted to remove the sediment and then decanted for an hour and then double decanted.

The wine showed undergrowth, leather, green tobacco leaf, and black and red fruits on the nose. The concentrated palate showed mostly the same, but for me, the sour green tobacco notes were overwhelming, hiding the red and black fruits that my bottle mate tasted in force. (She didn’t taste the tobacco or sourness at all.) Despite this, the wine showed good acidity and very fine tannins, all in excellent balance. No score for day one because this was an unenjoyable, sour mess for me.

I guess this bottle needed several hours of decanting on day one because on day two it was transformed (or my palate was) after spending the night in the fridge under vacuum seal. It had clearly lost something on the nose, but what the nose lost the palate gained. There were now aging black and red fruits and tertiary notes on the palate. Very elegant and refined. 13% abv.
