Wednesday, March 11, 2015 - P&p; closed and seemingly austere at first, takes 15 minutes to start opening up, and 40+ minutes to really get going - aromas of white peach, lemon/lime, honey, and light sweaty/woolly funk. On the palate it's quite tart and lemony/limey, with cool juicy peach/nectarine, light honey, and a strong current of saline and chalky/stony minerality. High acidity. Fully dry. Moderately silky body. Fairly long, saline, mineral finish. Once it has some air, this is quite nice.

Day 2 (saved in a half bottle) - somewhat richer and fuller, while still bright, citrusy and mineral; drinking well. Guessing this has a long life ahead of it.
