Sunday, May 28, 2023 - Opened an hour in advance. Pours a pale gold. Baked yellow apples seasoned with cinnamon, toffee apple, cinder toffee, and a slightly green element akin to tarragon and dill. The palate is fresher than the nose with a tart element reminiscent of green apple skin accompanied by a feint spiced component of sandalwood adding some nuance and depth. A superb Chablis.
