Monday, October 10, 2011 - Was bit of an experiment this one in that I cellared this modestly priced Australian cab sav to see how it would mature. Wasnt particularly light in colour at all which was surprising given its almost 8 years old. Quite black, purple hue, almost cohors like. Nose was beautiful, open, casis, raspberry and chocolate. Palate was surprisingly still big, chewy, a touch sharp with firms tannins and a lovely long finish. It probably could have gone another 3-5 years this one. Overall, worth cellaring a few more of these, hold on to longer and see what happens as it matures into a big, bold style that I like.
