Monday, May 21, 2018 - After I purchased these and stuffed them away in the cellar I went to another tasting with Jean-François Bourdy where he mentioned that these barrels for Vin Jaune are monitored often for freshness and when he detects any barrel going off, he immediately bottles it and winds up with this wine, the Savagnin Côtes du Jura. So it still often sees 4-6 years under flor. But since the barrels started heading in the wrong direction he bottles this for quick consumption, he stated within the first year of release. Indeed, the bottles I let age a bit did not age well. As you see my note from 2012, on release, this wine was quite fine and enjoyable. At this stage of its development it is all oxidized and nutty and really not all that enjoyable. It's certainly interesting, but it's challenging to drink more than a few sips. Glad this was my last bottle, but I really wish I drank these years ago.
