Friday, December 30, 2022 - Picked up United Dumplings for dinner and decided to see if this bottle was a good pairing. Was good upon opening, if seeming slightly flat/over the hill. However, second glass was transformative - if we had realized we’d have decanted a bit before diving in. Silky but with just a hint of spice. Some cherry notes but nothing too jammy. Even better for the third glass. So happy this was still very much in the zone.
