Wednesday, December 23, 2015 - 3rd bottle since release, and the first one I have tasted over successive days. When I opened this yesterday, it started leaner and a bit coiled, restrained. Several hours later, I took it to dinner and I saw the stems emerge, as did some body within the palate of the wine. I then stored the bottle in the fridge overnight, with the last glass under cork, which I have poured for this note on what is the following day. Showing today a mix of plum fruit and skin, blueberry, finishing with a tang. I find this vintage be broad shouldered and more fruit centric so I suppose this can be aged further but I won't for my final bottle. This wine is really more about fruit and broader texture so I find for my palate it will be better, more enjoyable in the short term.
