Wednesday, December 31, 2014 - Great long lasting mousse. Lots of complexity with well combined features of richness and crispness. Lemon, chalk, yeastiness, and a little toast. Fabulous with oysters in mignonette. A gift and it costs more than I would normally be willing to spend, but really very good.
