Sunday, December 17, 2023 - Cork in great shape. Lively mousse and perlage that lasted for many minutes. Clear straw in the glass. Biscuit, yeast and honeycomb on the nose. Fresh, crisp fruit on the palate (the meunier?), with a wide center of acidity that carried the finish for almost a minute. Really lovely champagne.
