Tuesday, August 19, 2014 - (Mostly) Grand Cru Chablis Dinner (GT Fish & Oyster - Chicago IL): Absolutely sensational in every way. open ~30 minutes before serving, then kept in glass for close to two hours. Lemon, lemon peel, lime and grapefruit came through at various points in its unfolding. Perhaps slightly reductive start, but this got bigger, bolder and increasingly exciting with more time in glass. Thank you, Brock!
