Monday, January 31, 2022 - Austin 3-star food + wine; 1/30/2022-1/31/2022 (Our residence, Austin, TX): This was one of the surprises of the night - namely, that our bottle seemed to still need a lot more time, assuming time will address the tannin and wood elements. I didn't like how those still overshadowed the fruit without evolution to desired secondary flavors.
