Thursday, July 9, 2015 - The best way to follow through on your mom's directive to "eat your veggies," this bottle was nearly dominated by aromas of asparagus and herbs for the first couple hours after popping the cork. However, with more air, this almost aggressive vegetal quality was balanced out nicely with the usual earthy, ash-like qualities I love about good Chinon. Tannins were almost non-existent; this wine is built on a backbone of acid and a surprising amount of fresh, berry-like fruit that make it fine to drink now, but offers the hope of some improvement over the next couple years. A real winner from a tough vintage.
