Thursday, September 22, 2022 - Doing really well, darker color, seems cloudy/unfiltered, still good fruit, quite fresh and in excellent shape. A bit rich, heavy as would be expected for 03, some mellowness going on with slight umami, forest notes, stewed aged jam, light spice. Excellent, pleasantly surprised. W/T at secret somm bar Tokyo.
