Monday, May 22, 2017 - Really green & somewhat bitter. Not in an herbaceous way, but just unripe.
Drank over the course of 4 hours the first night, then sealed it back up and gave it another couple hours the next night. Still pretty unyielding. There were hints of some more savoriness, but the green kept coming back - so I'm wondering if it was just my palate adjusting. I didn't have any food w/ this - though I could see this being a good palate scrub for some dishes.
Anyway - not much fun by itself. Maybe in 10 years it will come around - but it doesn't seem like there is enough there to make it worth the wait.
