Thursday, March 28, 2024 - Shrimp Heads Ride Again (PS Steak (Pseudo La Belle Vie, Mpls, MN)): Medium gold color. Drank a glass over an hour. Same bottle as Chablis28, and I think Craig's note is spot on. This is more oxidative now, showing toast, almond, flan, green melon, and honey on the nose. The palate shows the oxidativeness more, golden pear, honey, baked fruit, lemon, briny minerality, sour lemon, mature and richer than in its youth. I've got some, and I not worried at this point. Still excellent, but one to keep an eye on.
