Sunday, August 21, 2011 - This champagne has come good - very, very good. The dominant note is actually terroir rather than chardonnay, albeit that is in there - citrus lemony. Really impressive length. Blanc de blancs as first rate food wine. Matched with quickly sauteed salmon. Great match. Generally speaking, I think de Sousa's champagnes, and I've had many, might be just a bit outside the box if you will. That said, they pretty much work just fine for me - excepting perhaps where wood is introduced. Not de Sousa, I'm just not a fan of wood in champagne.
