Monday, July 13, 2020 - Medium straw color. The nose offers a very nice expression of GH: white fruits like peach and even raspberry, floral notes, and a hint of mint. The palate is initially broad and fleshy for a Kabinett, and while there's acidity keeping this buoyant, it isn't particularly focused on the mid-palate. The sweetness is very much in check and only barely perceptible. There's also a touch of dissolved CO2 and a resulting bitterness on the finish to start. A vigorous shake in the bottle releases the gas and lets the palate come through more clearly, and the bitterness disappears. This seems like it's on the early side of its drinking window, but it still needs time to start showing tertiary development. If opening now, decant aggressively to allow the CO2 to blow off.
