Last had this two years ago, and it was very youthful. Last night it was very youthful. It's a rich, but not excessively sweet Kabinett, and there's ample underlying acidity. Served blind I might have guessed someone's Spatlese Feinherb. Beyond the structure/form, this needs several more years, as it still seems a bit closed. Lots of depth, but not translated into outward character. That's consistent with most of my 2012 experiences - the wines are evolving very slowly.

Starting to show a little bit of maturity with smoke and diesel. The fruit no longer has that youthfull, sweet pear-pop but is more along the lines of ripe apples, lemon and lime with hints of unripe green melon. Lots of minerals with chalk and sea-salt. Good lenght. On the dry side for a trad kabinett. Very nice, but think it will be even better with another 5-10 years of cellaring.

Youthful, supremely elegant, yet possessing boundless flavor, this Kabinett is a reminder of what the pradikat was, and sometimes can be. There’s a delicacy to each element, and it’s deftly composed. The fruit is crisp and fresh. There’s a salinity and a stoniness - a splash of waves on a jetty. The acidity, while never dominant, resonates on the finish, with just a whisper of creaminess betraying the fact that this is ten years old. Drink any time over the next twenty years.

Very similar to my note from 7/2020, with better CO2 integration and overall more harmonious. This lacks the acidic focus of some vintages and has a touch of grapefruit pith bitterness on the finish, but it's quite a pleasant wine all the same.

No particular signs of any aging. Quince and honey notes, with an undercurrent of limey citrus and slate. Very long finish. By coincidence, paired with Pad Kee Mao from Origin (takeout this time), which echoes the pairing of 2012 Prum Auslese with the very same dish at Origin in October, which I found absolutely delightful. So is this, with a bit less intensity, but perhaps better geared to the lower heat levels that Origin is using nowadays for those mid-NJ palates.

Creamy peach, lemon, grapefruit, and pineapple leap from the glass. Joined by some light sulphur notes with chlorine.
Quite reserved on the palate, by comparison. Very delicate. Perfect acidity; not bracing, instead it frames the wine long into the finish.
Opinion: Seems in between phases at the moment. Yet to build tertiary complexity, though it finishes almost dry. Needs more time for my palate. Cork came out easily and was in very good condition, though quite soft. Good wine.

SLDS New Year #2: Spice, white florals, lemon, graphite and a light red tinged berry note - really bright and inviting nose. Composed and controlled palate, with beautiful balance. Long length, with the sweetness and acidity working wonderfully together. No hurry on this but delicious today - will try my next bottle in 5-6 years.

Taste: The feel is light bodied with crisp, high acidity. The acidity is well integrated and refreshing with the feel showing a feather-like quality with white peaches, green apples, pears, lemon peels, crushed rocks, and some white florals.
Overall: This is an excellent kabinett. It is in great harmony right now if one prefers more primary aromas and flavors. This still has enough to age further and develop but it is really lovely right now.

Medium straw color. The nose offers a very nice expression of GH: white fruits like peach and even raspberry, floral notes, and a hint of mint. The palate is initially broad and fleshy for a Kabinett, and while there's acidity keeping this buoyant, it isn't particularly focused on the mid-palate. The sweetness is very much in check and only barely perceptible. There's also a touch of dissolved CO2 and a resulting bitterness on the finish to start. A vigorous shake in the bottle releases the gas and lets the palate come through more clearly, and the bitterness disappears. This seems like it's on the early side of its drinking window, but it still needs time to start showing tertiary development. If opening now, decant aggressively to allow the CO2 to blow off.

Drank with Thanksgiving dinner. No decant but had been open in the bottle for about an hour prior to drinking. Explosive bouquet of tropical fruit. Very well balanced, with enough acidity to balance the sweetness. Prominent flavor of pineapple, passion fruit and herb. A pleasure to drink.

Just what I'm looking for in Kabinett, crisp, fresh and a touch of sugar. A hint of petrol initially but this gives way to peach and nectarine. Lovely balance throughout but let down a tad by a relatively short finish.

So unsatisfying in that I never don't want another sip. Aromatics are intensely beautiful. A high pitched nervy nose of golden apple, lime, burnt rubber and matches. Flavors of hone, red apple, pineapple, and lime are concentrated and luscious and the finish is persistent.

Yellow color with a bouquet and flavor of Granny Smith apples with only a slight hint of petrol. Wonderful acidity with only a little sweetness. Good balance and depth. Very nice wine and in the slightly sweet style that I now favor over sweeter German wines. Drunk with a wonderful multicourse meal of endless small portions at Benu in San Francisco. Chose a single wine for the entire meal and it worked out well. Less can be more.

Golden yellow in the glass. Slightly sleepy on the nose and palate right now showing simple stone fruits, bees wax, honey, light baking spice, and medium acidity. I think its going through a short dumb phase right now and would wait another year to see if it comes around by then.

The notes below give a pretty good list of descriptors. I'll just say that this has very good intensity without being heavy and extracted, and that it's really balanced, with lots of forward fruit and lots of equally forward acidity. Drinking very well now, despite the fact that it's all primary. What to do with remaining bottles? A real dilemma....

Drank this over the course of a week. Aromas are intense with green apple, citrus zest and loads of mineral. Palate is medium bodied with good, rich round fruit that is definitely plenty sweet. Nice acidic punch. Held up reasonably well over the week, though clearly more intense and powerful on days 1 and 2.

petrol and oil strong on the nose. On opening some sharpness that put me off a bit. However, once exposed to air in bottle and glass it really settled down and fleshed the fruit out. What a difference a year makes. When I last had this in March 2015 (first bottle of a case), it was a wall of acid and extract, and not much else. It's still a wall of acid and extract now, but the fruit has come out to play. Tense, dense, and exciting from start to finish, I have no doubt this is a long-distance runner.

(AP 03 15) Wow, what a kabinett! I should mention this is not the initial bottling, rather the 2015 library release. I haven't had the chance to try the initial version, this late release is high alcohol (typical for many of Prum's late releases) at 10.0% although it doesn't come across as harsh on the palate. Rather the alcohol elevates the clean, intense green fruits and keeps it from feeling like a Spätlese. A fascinatingly intense Kabinett that showcases the spice of the Himmelreich. The most perfectly integrated Kabinett I've ever had.

Dinner with Monthly Group at Waterloo Times (Waterloo Times, Waterloo Centre): A little too sweet and soft for a Kabinett to my taste, but true to JJ Prum's standards, this was nevertheless a wine of quality. The nose was still heavy with grape sugar aromas alongside finer scents of stone fruit, citrus peel and mineral. Quite primary. On the palate, a soft, almost Saptlese-like attack of white peach and apple flavours were punctuated with brighter notes of lime zest and mineral on the midpalate. Still very primary as well, and perhaps rather sweeter than I would like, but there was an elegance and balance to it that spoke to both the Mosel and the winemaker's quality. Finish was monolithic, showing sweet sugars with a touch of spice. Altogether, not bad, but far from ready. This will need 3-4 years more at the very least.

Lots of green notes and quite tight initially, after an hour or so of slow ox, begins to uncoil showing nice slate, white tropical fruit, apples, palate shows some nice stone fruit, with medium intensity and acidity with an enjoyable lingering finish. Somehow I get the sense this is holding back and will ultimately be something special in 8-10 years

The Prüm Dinner (Chicago, IL): #02-14. 2012s still have it going on, though I'd definitely agree they are on the cusp of all shutting down. The nose on this was extremely aromatic, with a strong floral component. The palate showed good balance between the slatey mineral quality, racy acidity, and ripe peaches.

Mostly Prum with Duck (Peking Duck House): PnP. Lots of sulfur and sponti that made this somewhat hard to read. Lime, honeydew, a huge burst of flowers, lots of acid. I liked the nose but it wasn't showing a whole lot on the palate. Likely needed significant air that it didn't get.

Day 3 in the Mosel - Schaefer/Selbach-Oster/Prum (Mosel Saar Ruwer - Germany): Of all the Graacher Himmelreich Kabinetts, this might be my favorite. Usually more of a simplistic wine, this GH had some really interesting salty notes thrown into the tropical fruit melange. Gave it some extra grip and exoticism. Well done.

Smells strongly of wet, rained on stone, along with a good dose of petrol, flowers, cool golden and green apples and stone fruit, and a slight yeasty, almost meaty savory note. Wonderfully mineral on the palate too, with cool white peach, apple, mandarin, lime, only a touch of sweetness, and excellent acidity. Quite enjoyable.

I wanted to like this more than I did. It has nice light kabinett weight. Is very mineral and there's a cool freshness to it, but the tropical fruit flavors spoil it for me. This goes well past citrus ripeness and is firmly tropical - I'm talking pina colada - pineapple, melon, guava. The tropical flavors lead on both the nose and palate with a little lime behind it.
I drank this next to 5 other kabinett and this was the only one with a tropical fruit flavor profile, all others have a citrus fruit profile (lemon, lime, orange, grapefruit). I'm disappointed as I wanted to buy a case for cellaring but don't think I can do it.

Deliciously cool on a hot Bahrain evening. Very full-bodied for a Kabinett. Nice and crisp, perhaps a little bitterness in the tail. I prefer the ethereal nature of the Von Schubert '12's, but this is still lovely.

Clean and intense aromas of white peaches, honeysuckle, rose and citrus peel jump from the glass which holds this pale yellow-green Riesling. Light-bodied, fresh, slightly sweet and with imperceptible alcohol (listed as 9.5%), it follows with stone fruit, mineral and lime flavors. Solid in the middle and concluding crisp and long, this is a very memorable wine. While it can be enjoyed in its youth, it should evolve beautifully over the next decade. Drink now-2024.

JJ Prum - 2012 Range (Sydney, Australia): Slate pervades the nose, with graphite, violets, lemon rind and some apricot notes supporting it. The fruit shows off lovely purity (a running theme throughout this tasting) alongside a frame of acid that provides a note of clarity and finesse, as such it rose above the other Kabinett wines today for me. With good drive and length, this was both impressive and delicious.

One of the better value Mosel Rieslings. Chilled the bottles very well before taking to restaurant. Enjoyed with Pan-Asian cuisine at Typhoon in Santa Monica airport with family and friends for Mom and Dad's 50th Anniversary. Just the right amount of fruits (peach, lemon, lychee) and sugar for a kabinett. No rusty taste, smooth transition all the way to finish. Great for aperitif, with appetizer, with main course and with dessert.

Blassgelbe Farbe;
Würzige, kraftvolle Duftnoten, ergänzt durch Fruchtaromen im Hintergund (die mit mehr Sauerstoff nach einiger Zeit besser zur Geltung kommen) von Limette, Aprikose, Pfirsich, vielleicht grüner Apfel;
Leicht perlende Textur, zurückhaltende feine Süße, gut ausgewogen, sehr lebendige Säure (noch jung), mittellanger Abgang, kräftig, etwas zu hart und etwas zu wenig elegant, würzige Noten (Zimt?) dominieren auch im Geschmack, wird etwas fruchtiger mit Luftkontakt;
Sehr wandlungsfähig beim Kontakt mit Sauerstoff, wird besser und mehr Aromen kommen zum Vorschein, hat sicher gutes Entwicklungspotenzial

petrol and oil strong on the nose. On opening some sharpness that put me off a bit. However, once exposed to air in bottle and glass it really settled down and fleshed the fruit out. I was soon squishing this between my teeth with pleasure. Not a blockbuster, but a very nice wine. AP 2 576 511 06 15

Delicate on the palate, with great fruit purity and the sweetness integrated seamlessly with the rest of the wine. Good depth and length. This is ticking along very nicely and isn't yet showing signs of shutting down.
