Tuesday, November 23, 2021 - My last bottle of this and a very good one. Supple fruits on the darker end of the red spectrum. Resolved tannin and silky Pinot Noir fruit with classic dusty sous bois and leather notes. A bit of spice as a topnote and there is just enough remaining structure to hold it all together. Very satisfying Burgundy that is in exactly in the zone where I want to drink it. It went a bit faster than optimal (well, because it was so delicious) so I didn't get to linger over it as much as I might like. This is the last bottle of this wine or any Cathiard from my cellar and the world would have to change to reverse that given current pricing.
