That said, now it finishes a touch short and was better in my earlier tastings. It’s still an awesome wine— and a stupidly good value— just not quite the wine it used to be. I should have seized the moment earlier and finished what I had. Will it be tasty a year or two from now? Absolutely. It’s just that optimally to my palate, I should have finished a year ago. Pair with PacNW grilled salmon— you won’t regret it!
