Thursday, December 22, 2016 - Initially at cellar temp it's a little closed and astringent. Warming up a touch, we have strawberry jam and some stem-like astringency with herbs and underbrush. Big acid to go along with the fresh fruit. Didn't change much over a couple hours open, aside from smoothing out somewhat.
