Thursday, April 19, 2012 - Not that it means anything or really matters at all, but this pale colored fizz has some of the absolutely smallest bubbles I've ever seen. Pretty classic, fresh and clean BdB nose of apple, citrus, dough and salty minerality. The mousse is not huge by any means but it is distinctive and gentle and stays for a good while. Not a very developed flavor profile, mostly citrus, apple and chalky minerals. Stylistically a bit restrained yet lean, well structured and elegant. Almost bone dry, but very approachable. The finish seems to be lacking something, feels a bit thin. Clearly inferior to Larmandier-Bernier's counterpart, but not bad. Definitely one to enjoy as an aperitif.
