Sunday, May 10, 2020 - Classic Fourny in every way: nutmeg, coconut, brioche, tangerine, and apple. An ample and happy mousse bound in a tight, concentrated bead. A touch of biscuit on the nose and finish. Maybe a tad lean for a blanc de blanc, but satisfying nonetheless. With the remaining 16 Rappahannock oysters hauled in for Mother’s Day that we then shucked, topped with compound butters and then grilled. Recommended.
