Tuesday, October 13, 2020 - 1939 Cheval Blanc Dinner....despite a typhoon. (L'Envol Restaurant, St. Regis Hotel, Wan Chai, Hong Kong): Deep copper colour. Lovely nose of caramel and chocolate croissant with that baker’s chocolate I love. Palate is burnished sweet copper, really rounded, complete. Still young and fresh at one level with ripe but still fresh banana yet mature and more alluring at the next layer down. Good metallic copper-ish and bitter chocolate finish. Good, very long resonance.
