Friday, November 29, 2019 - Perfect pairing with reverse sear striploin. Well-balanced, great depth of fruit and some fine drying tannins that went well with the beef.
12/1/2019 8:40:00 AM - They were 2” thick dry-aged striploins from Farm & Field. I particularly like reverse sear for dry-aged because the steak tends not to dry out and you get perfect medium rare throughout. You’re so right about winter benefit. Cheers!
