Thursday, November 25, 2021 - Still young & shows a lot of freshness more common with Prosecco. Needs time to age in the bottle. On the palate lemon & apricot come through. Very mild yeast/brioche flavors hit mid-palate & fade as a medium bitter pithy finish takes over. I expect as it ages in the bottle the yeast/brioche flavors to grow, picking up a nuttiness, and smoothing out the finish. I wouldn’t touch it until at least 2025, should continue to age past 2030.
