Wednesday, August 29, 2018 - Opened on a Wednesday night to accompany some Rosemary Grilled Chicken. Upon opening, it had a fairly fierce grapefruit nose, reminiscent of a New Zealand SB, with a crisp wet stone/minerality on the palate. After an hour, it had settled down quite a bit, displaying bread, lanolin, vanilla, and slightly nutty notes on the nose, with much more moderate citrus and oily nut flavors. The following day, the fruit was more tropical (papaya?) and the texture more rounded. The finish lasted almost a full minute. All in all, I really liked it, although ar first it was almost a bit too Chablis-like for me. I have another bottle, and will wait a few more years to see if the crisp acidity tones down a bit.
