Wednesday, June 24, 2015 - (Distillery visit w Bo and Chirong) Typical sour rye nose, cinnamon and nutmeg spices, gentle smoke, with some anise. Clean, sweet, complex. Christmas ham. Opens with watering, showing mint. Not quite my style, but already quite open [ended] and young. I wonder if barreling will give it much more character?
